Cranberry Nut Bread


• 1 1/2 cup All-purpose flour
• 2 teaspoon Baking powder
• 1/2 teaspoon Fine sea salt
• 3/4 cup Fastachi dried cranberries
• 1/3 cup Fastachi raw pecans
• 1/3 cup Fastachi raw walnuts
• 3/4 cup Softened butter
• 1/2 cup Honey
• 2 Eggs
• 1/2 cup Freshly squeezed orange juice

Total time: 60 minutes


  1. Preheat oven to 350.

  2. Grease a 9x5" loaf pan.

  3. In a medium-sized bowl, whisk together flour, baking powder, and salt.

  4. Roughly chop the raw pecans and walnuts and set aside.

  5. In a large bowl, using a hand mixer, cream together butter and honey. (for about 1 minute)

  6. Stir in one egg at a time. (making sure to blend well after each addition)

  7. Slowly stir in the orange juice.

  8. Add the dry mixture to the creamed honey in four parts. (beating the mixture after each addition)

  9. Fold in chopped nuts and dried cranberries.

  10. Transfer batter to prepared loaf pan, and cook for 55-60 minutes or until a toothpick inserted in the middle comes out clean.

  11. Serve warm with fresh nut butter or jam.
