Crystallized Fiji ginger or candied Fiji ginger is both spicy and sweet at the same time and is used as a snack or as an ingredient for baking and confections. Fiji has one of the most pristine ecosystems in the world, with nutrient-rich soil and natural irrigation from tropical rainfalls producing some of the purest ginger. Fiji ginger is harvested from young ginger crops (unlike other countries) making it a less stringy and more tender than ginger harvested later.
