Plant-Based Healthy Granola Bar

Ingredients:

• 1 cup dates (pitted)
• 1 1/2 cup rolled oats
• 1/2 cup almonds (chopped)
• 1/4 cup maple syrup or Honey
• 1/4 cup peanut butter (or nut butter of your choice)

Preparation Time: 15 minutes
Chilling Time: 15-20 minutes
Total Time: Approximately 30-35 minutes

Preparation:

  1. In a food processor, process the 1 cup of Medjool dates until they form small bits and reach a "dough" like consistency. This usually takes about 1 minute. The dates should roll into a ball.

  2. In a large mixing bowl, combine the processed dates, oats, and chopped almonds. Set aside.

  3. In a small saucepan, warm the maple syrup or honey and peanut butter over low heat. Stir until well combined and smooth. For an added variation to the recipe, you can replace the peanut butter with a nut butter of your choice.

  4. Pour the warm mixture over the oat and date mixture into the bowl. Mix well, breaking up the dates to disperse them throughout the mixture.

  5. Once thoroughly mixed, transfer the mixture to an 8x8-inch baking dish or another small pan lined with plastic wrap or parchment paper. Press down firmly with a flat object, such as a drinking glass, to pack the mixture tightly and create an even surface.

  6. Cover the pan with parchment paper or plastic wrap and refrigerate or freeze for 15-20 minutes to allow the bars to firm up.

  7. Remove the bars from the pan and cut them into 10 even bars or 9 squares, depending on your preference. Store the bars in an airtight container for a few days. You can keep them in the freezer to maintain freshness, although it's not necessary.
