Fiji has one of the most pristine ecosystems in the world, with nutrient-rich soil and natural irrigation from tropical rainfalls producing some of the purest ginger. Fiji ginger is harvested from young ginger crops (unlike other countries) making it a less stringy and more tender than ginger harvested later. Ginger, including candied ginger, has medicinal properties - ginger is most commonly used as an effective treatment for nausea and aiding in digestion.
