Date & Nut Energy Bar

1 1/3 cup Medjool Dates
1/2 cup Tart Cherries
1/4 cup Fastachi Peanut Butter, Almond Butter or Walnut Butter
1/3 cup Fastachi Roasted Almonds
1/2  cup Plain Roasted Oats
Line an 8x8 baking pan with plastic leaving a 2" overhang on the sides.
Soak dates in warm water for 15 minutes and drain.
Blend dates, dried tart cherries, nut butter, roasted almonds and oats in a food processor until well combined, scraping down sides as needed. Mixture will be thick.

Pour mixture into prepared baking pan, and press down to make an even layer. Placing another sheet of plastic wrap on top and pressing down makes this process easier, as the mixture will be very sticky.
Place in freezer for 30-40 minutes. Using plastic overhang, remove mixture from pan, and cut into 8 bars. Wrap each bar individually, and store in freezer or refrigerator.
