Date & Nut Energy Bar


• 1 1/3 cup Medjool dates
• 1/2 cup Tart cherries
• 1/4 cup Fastachi peanut, almond, or walnut butter
• 1/3 cup Fastachi roasted almonds
• 1/2 cup Plain roasted oats

active time: 20 minutes
total time: 70 minutes


  1. Line an 8x8 baking pan with plastic wrap. (leave a 2" overhang on the sides)

  2. Soak the Medjool dates in warm water for 15 minutes and drain.

  3. Blend dates, dried tart cherries, roasted almonds, oats and the nut butter of your choice in a food processor until well combined. (scraping down sides as needed)

  4. Pour the mixture into the prepared baking pan, and press down to make an even layer. (Placing another sheet of plastic wrap on top and pressing down will make this process easier, as the mixture will be very sticky.)

  5. Place in the freezer for 30-40 minutes.

  6. Using the plastic overhang, remove the mixture from the pan, and cut it into 8 bars.

Wrap each bar individually, and store in the freezer or refrigerator.
