Gorgonzola-Walnut Stuffed Burgers with Caramelized Onions
Serves: 6
Ingredients Caramelized Onions - 4 Tbsp olive oil
- 4 medium yellow onions, halved and thinly sliced
- Sea salt and freshly ground pepper to taste
Burgers - 3 pounds lean ground sirloin
- 5 oz crumbled gorgonzola cheese
- 1/4 cup Fastachi Walnut Butter
- 1 tsp sea salt
- 1 tsp garlic pepper
Instructions: Caramelized Onions Heat olive oil in a large skillet over medium-low heat.
Add the onions, and let them cook, stirring occasionally until they are deep golden brown and caramelized, about 45 minutes. Season well with sea salt and freshly ground pepper. Remove from heat and set aside.
Burgers Prepare grill.
Shape ground sirloin into 12 thin patties.
Combine the sea salt and garlic pepper.
In a small bowl, use the back of a fork to cream together the gorgonzola cheese,
Fastachi Walnut Butter, and half of the sea salt-garlic pepper blend.
Divide the mixture among six patties. Top with remaining patties; pinch edges to seal. Season both side of patties with remaining sea salt-garlic pepper blend.
Grill burgers, covered over medium heat for about 5-7 minutes or until a thermometer reads 160â°. Remove from grill, cover loosely with foil and let rest for 10 minutes.
Serve burgers on brioche buns with caramelized onions.
