Pine nuts are somewhat more expensive than other nuts, due to their labor-intensive harvesting process. Pine nuts, actually do come from the pine cones. The pine cones are collected and dried under the hot summer Mediterranean sun. As they dry, the pine cones open up and reveal the inner pine kernel. The kernel is then cracked open to reveal the inner jewel – the pine nut.

disappointed with the pine nuts. very little flavor and consistency is not crisp, but rather soft and slightly "mushy"
