Crystallized Australian ginger or candied Australian ginger is both spicy and sweet at the same time and is used as a snack or as an ingredient for baking and confections. This Australian ginger is harvested from young ginger crops (unlike other countries) and is smaller because there is less yield.
Australian ginger is less stringy and more tender than ginger harvested later. Ginger, including candied ginger, has medicinal properties - ginger is most commonly used as an effective treatment for nausea and aiding in digestion.
