As with all of the Fastachi nuts, the process begins with a premium raw nut. This particular nut just happens to be a special variety of California grown almonds that naturally has a soft shell. The almonds are then roasted by hand, in steel drums, small batches with only sea salt. But what makes this particular Fastachi process unique is the shell of the almond. As the almonds tumble in the roaster, it is the shell that heats up and roasts the almond; it insulates the almond, cooking it gently and evenly, allowing some of the salt to seep through. The result is an extra crisp almond with incredible flavor, and just a touch of salt
